Immediate freezing of food abruptly cooled, preserving texture and taste. Colorless gas used as preservative. Prevents the products enzymatic and bacterial degradation, being the more effective gas on acid food.
WINE HARVEST
The harvested grapes refrigeration and protection - besides avoiding fermentation - allows grapes inertization and protects them from oxidation. Furthermore, decreases the use of SO2 and controls acidity, maintaining the color.
